Filipino Grilled Chicken

1 pound chicken, in serving-size pieces
1/2 cup pineapple juice
1/4 cup soy sauce
2 teaspoons white vinegar
1 garlic clove, minced
1 teaspoon fresh ginger, minced
1 tablespoon honey
1/4 teaspoon pepper
1/2 cup brown sugar, firmly packed
Combine pineapple juice, brown sugar, soy sauce, vinegar, garlic, ginger, honey, and black pepper. Add chicken and marinate in the refrigerator for 4 hours.
Grill chicken until it is golden brown and throughly cooked. Baste with marinade often.
Makes 4 servings
