Fish Adobo (Adobong Isda)

INGREDIENTS

3 cups green peppers, chopped
1 tablespoon oil
5 tablespoons white vinegar
4 garlic cloves, chopped
2 teaspoons salt
1/2 cup onions, chopped
2 bay leaves
1/3 cup water, boiling
1 pound fish fillets

Use any firm white fish. Cut fish into individual serving pieces and rub with salt. Fry the fish in hot oil until browned. Remove fish from pan.

Add garlic and onions to pan, cooking until onion is translucent. Add bay leaves, peppers, and vinegar. Cook slowly until the peppers are tender. Add the fish and boiling water. Simmer 5 minutes and serve hot.
