Easy Kare-Kare

Any Philippine fiesta, particularly in the Tagalog region, is not complete without Kare-Kare, the stew with a ricy nutty sauce and served with a variety of vegetables.

INGREDIENTS

2-1/4 pounds oxtails, cut into serving pieces
About 1-1/2 cups eggplant, cut into pieces
3/4 cup peanut butter
1 cup beef or chicken broth
1-1/2 cups string beans, cut into 2-inch lengths
1 cup bok choy (pechay) or kangkong, watercress can be substituted
Salt, to taste
Shrimp Paste, bagoong, sautéed
Mama Sita's Kare-Kare Mix (Stew Base Mix), available at Filipino or Asian markets

Cut the oxtail into serving pieces, boil until tender, leaving about 4 cups broth. Skim off fat from the broth. Remove and set aside meat.

Dissolive Mama Sita's Pang Kare-Kare Mix and peanut butter in about a cup of the broth. Let the remaining broth boil. Add eggplant and the string beans into the broiling broth until almost cooked. Stir in meat and sauce mixture. Add bok choy and salt, to taste.

Serve with a side dish of Bagoong and rice.

BAGOONG ALAMANG

2 cloves garlic, crushed
1 small onion, sliced
1 small tomato, sliced
4 tablespoons alamang, shrimp paste

Sauté garlic, onions and tomato in a little oil. Add alamang. Sauté for another minute.
