Chicken and Pork Adobo

INGREDIENTS

1 pound chicken, cut into small serving-size pieces
1 pound boston butt pork, cubed
1 cup white vinegar
1 cup water
6 garlic cloves, crushed
2 teaspoons salt
2 bay leaves
1/2 teaspoon pepper
2 tablespoons soy sauce
2 tablespoons oil

Add vinegar, water, garlic, salt, bay leaves, and pepper to a 6-quart covered pot. Bring to a boil.

Cut up chicken and pork into small serving-size pieces. Add to the pot and return to a boil. Lower the heat to a simmer, and cook, covered, for 30 minutes. Add the soy sauce and cook 10 minutes more. Remove the meat from the pot and reduce the juices by at least half.

Remove the sauce to a bowl; and reheat the pot. Add the oil and brown the meat in small batches. Drain the oil and return meat and sauce to pot. Heat to serving temperature. Serve with rice.
