Chicken Fritada

INGREDIENTS 1 pound chicken
5 garlic cloves, crushed
1 large onion, sliced
2 medium tomatoes, chopped
1-1/2 teaspoons salt
1/2 teaspoon pepper
1-1/2 cups chicken stock
1 pound new potatoes, peeled, quartered or halved
1 cup green bell pepper, sliced
2 tablespoons butter or margarineCut chicken into serving-size pieces. Melt butter in skillet and brown garlic and onion until soft. Add chicken and brown on both sides.
Add tomatoes, salt, pepper, and stock. Cover, and cook on medium heat until chicken is about halfway cooked. If potatoes are large, quarter or halve them; then add to skillet; add red and green bell pepper strips. Cook until potatoes are soft. Serve over rice.
