Soup is the basic to the Polish meal; it is to the Poles what rice is to the Oriental and pasta to the Italian. Cold Cucumber-Beet Soup is a specialty in summer. Duck soup in the winter; Borscht is common all year round. You should also try the Nothing Soup - at least as a conversation piece. Bigos is the Polish national dish. You will have to go a long way to find a heartier, more fragrant stew.

Pierogi is a word that makes a Polish mouth water! It will do the same for you. This pocket-noodle can be filled with meat, cheese, potatoes, sauerkraut, or even fruit. Uszka, koldnuny, nalesniki, and kulebiak, which can also be filled, are delicious variations of pierogi.
