Baked Leftover Fish

INGREDIENTS

3 boiled potatoes, sliced
1-1/2 cups diced cooked fish
3/4 cup sliced cooked cauliflower or mushrooms, optional
2 hard-cooked eggs, sliced
Salt and pepper
1 tablespoon flour
1 cup dairy sour cream
1/4 cup water
3 tablespoons bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons butter

Arrange layers of half the potatoes, fish, cauliflower, eggs and remaining potatoes in a greased 1-1/2-quart casserole. Lightly sprinkle salt and pepper over each layer.

Blend flour into sour cream; stir in water. Spoon over casserole mixture.

Mix bread crumbs, cheese, and butter together. Sprinkle over top of casserole.  Bake at 350 degrees for 30 minutes.
