Apple Soup

INGREDIENTS

6 large apples
1 quart water
3/4 cup sugar
1/2 teaspoon cinnamon, optional
1/2 cup lemon juice
1 cup whipping cream
2/3 cup white wine, optional

Pare and core 5 apples. Cook in water until soft. Rub through sieve, or purée in electric blender to make an applesauce.

Combine applesauce, sugar and cinnamon, if desired, in a large bowl.

Shred or mince remaining apple; mix with lemon juice. Stir into applesauce mixture. Chill.

To serve, blend cream into applesauce mixture. Stir in wine, if desired.

Serves 8 to 10

NOTE - If desired, substitute 1 can or jar (16 ounces) applesauce and 1 cup water for apples and water.
