Almond Mazurkas (Mazurek Migdalowy)

INGREDIENTS

1 pound blanched almonds, ground, about 4 cups
2 cups sugar
3 eggs
2 tablespoons lemon juice

Combine almonds and sugar; mix well.

Beat eggs with lemon juice just until foamy. Stir into almond mixture.

Pour batter into a well-greased 15 x 10 x 1-inch jelly-roll pan.  Bake at 250 degrees about 1 hour, or until golden.

Cut into 2-inch squares while still warm. Remove from pan.
