Smoked Chicken

This is an outdoor recipe.

INGREDIENTS

2 sticks butter or margarine
Apple cider vinegar
Coarsely ground blackpepper
3 chickens, split into halves

Heat grill to medium hot.

Place the butter in a small pan, pour in enough apple cider vinegar to cover. Heat over medium heat, just enough to blend the butter and vinegar. Add black pepper, and keep adding black pepper until your mixture turns black. (It takes a lot of pepper).

When the grill is medium hot, place chicken halves over the coals, and cook for about 15 to 20 minutes. Turn over and use a small brush to baste the chicken with the vinegar mixture. Baste often and generously, and continue to turn and baste until the chicken is done. (Chicken is done when juices run clear and the bone joints become loose.)

NOTE - The chicken will get very dark and crispy-skinned during the process - this is normal and what you are looking for.
