Green Chili Stew with Pork

INGREDIENTS

3 pounds boneless pork, cubed 1/2-inch
3 tablespoons peanut oil
3 stalks celery, chopped
2 medium tomatoes, diced
7 green chilies, roasted, seeded, chopped
4 cloves garlic, peeled and crushed
Chicken stock or water to cover
Salt to taste
Jalapeno salsa, optional

Brown the pork in oil in batches in a heavy iron skillet. Place the meat in a 3 to 4-quart covered casserole and add the remaining ingredients. Deglaze the skillet with the chicken broth (water) and add to the casserole. Barely cover the ingredients with water or stock. Cover and simmer until the stew is thick and meat very tender, about 1-1/2 hours. Add salt to taste before serving.
