Cherokee Fried Hominy

INGREDIENTS

Several strips of bacon, to your taste
1 or 2 cans white hominy
1 small onion, chopped, optional
Black pepper, to taste

Fry bacon until crisp; remove from pan. Drain most of the drippings.

Drain hominy. Fry hominy in the remaining bacon drippings, along with the onions, if using. Crumble the bacon and add to the hominy. Season with pepper to taste.
