Eggs and Wild Onions

Don't pick or use wild onions next to a highway or roadside. If you can't find wild onions, use green onions.

INGREDIENTS

About 2 dozen young, tender wild onions
Water
6 large eggs, beaten with a teaspoon of water
Bacon grease or butter, for frying
Salt and pepper, to taste
Salsa or chopped green chilies, optional

Wash, dry, and coarsely chop the onions. Steam them for a few minutes with a little water. (Cover and cook until they are limp).

Add beaten eggs and stir to scramble them. Add butter or grease, and salt and pepper to taste. Cook until they are of the consistency you like. They are best if not overcooked. Serve hot.

NOTE - I like to serve these with a dollop of medium or hot salsa, or chopped green chilies.
