Cherokee Succotash

INGREDIENTS

2 pounds fresh or dry lima beans (small ones are best)
3 cups fresh corn, cut from cob
4 to 6 "wild onions", pearl onions may be substituted
Salt to taste
Pepper to taste (not in original recipe but good)
2 tablespoons melted bacon fat (originally bear fat)
2 pieces smoked ham hock (originally smoked bear meat)
3 quarts water

Soak beans, if using dry ones, for 3 to 4 hours.

Bring the water to a boil and then add the beans. Cook at a moderate boil for 10 minutes, then add the corn, ham hocks, salt and pepper, and onions. Reduce heat and cook for 1 hour on a low heat.
