Commanche Stew

INGREDIENTS

5 pounds stew beef
3 pounds bacon or salt pork
One (4-pound) chicken
12-1/2 cups tomatoes, canned
7-1/2 cups whole kernel corn
7-1/2 cups green peas
2 pints oysters
4 large onions
3 ancho chilies
8 pounds potatoes
Salt and pepper to taste
Cayenne pepper, to taste
1 rabbit, optional
1 game bird, optional
1 squirrel, optional

Put all meat and the chilies in a stew kettle in boiling water to cover, and cook for 2 to 2-1/2 hours. Then add potatoes, tomatoes and onions, and cook for about 1/2 hour before adding corn and peas. (The oysters should be added about 15 minutes before the stew is removed from the fire, or may be left out entirely.)

Cooking time will take about 4 hours
