Baconed Hominy, Seminole

INGREDIENTS 8 strips bacon cut into small pieces
2 pounds cooked hominy
Salt and pepper to taste
3 scallions, coarsely choppedFry the bacon pieces in a large skillet until well browned and crisp. Add the hominy, salt and pepper and cook, stirring continuously for 6 to 7 minutes. Add scallions and continue cooking for an additional 5 minutes. Serve immediately.
