Speculaas

Speculaas are a traditional Dutch biscuit or cookie baked on St. Nicholas' Eve.

INGREDIENTS

4 cups flour
1 cup butter
1-1/2 cups brown sugar
1 teaspoon salt
4 teaspoons baking powder
1 teaspoon cinnamon
1/8 teaspoon cloves
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon black pepper
Milk
Blanched almonds, optional
Candied fruit peel, chopped, optional

Preheat oven to 325 degrees.

Combine all ingredients but the almonds and/or candied fruit peel together. Add milk until it makes a stiff paste that can be rolled out.

Roll into sheets and then press the blanched almonds and/or candied fruit peel on top, if desired. Cut into rectangles about 2 x 4-inches and transfer to a greased cookie sheet. Bake until light brown, about 8 to 10 minutes.
