Vine Ripe Tomato Slices Vinaigrette

INGREDIENTS 4 fresh lettuce leaves, washed
3 large, vine-ripened beefsteak tomatoes
1 red onion, sliced into thin rings
1 cup Vinaigrette DressingLine each salad plate with a lettuce leaf.
Core tomatoes and slice into 4 thick slices. Place 3 slices on each lettuce leaf in a shingled manner. Place several onion rings over the tomato slices and spoon the Vinaigrette over the salads.
NOTE - This is a simple salad, but it is delicious and at its best if you do use the beefsteak tomatoes at room temperature. It is important to use vine-ripened tomatoes for this salad.
VINAIGRETTE DRESSING
2 teaspoons salt
1 teaspoon crushed black pepper
1 tablespoon sugar
1/4 cup red wine vinegar
1 clove garlic, minced very fine
3/4 cup salad oil or olive oilIn a small bowl, dissolve the seasonings in the vinegar and add the minced garlic. Whisk in the oil slowly and incorporate completely. Mix well before serving.
NOTE - This dressing is also delicious on hearts of romaine salad. If you choose to use olive oil, be sure it is of top quality. For happiest results, the olive oil and tomato flavors should not conflict.
