Veal Potenza

INGREDIENTS

1-1/4 pounds veal cutlets, cut into 2-inch squares, 1/8 to 1/4-inch thick
1 cup all-purpose flour
1/2 cup olive oil
1 clove garlic, chopped
3 medium green peppers, cut into julienne strips
1-1/2 cups sliced mushrooms
Salt and pepper to taste

Dredge veal in flour. Heat oil and add garlic, veal and peppers. Fry about 10 minutes. Add mushrooms and heat until mushrooms are hot.    Season with salt and pepper to taste.

Remove meat and vegetables with a slotted spoon and serve.

NOTE - If you want veal to brown, sprinkle on a little water while frying in hot oil.
