Tossed Salad with Blue Cheese Dressing

INGREDIENTS 1 head Boston lettuce or any type of the freshest lettuce available
6-ounces blue cheese
2 cups mayonnaise
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons cider vinegar
1/2 cup oilWash the lettuce and tear into pieces. Dry thoroughly.
Crumble the blue cheese in a mixing bowl, but do not mash to a paste as this will make the dressing too smooth. Blend in mayonnaise.
Dissolve dry ingredients in vinegar.
Add oil to mayonnaise, beating constantly. Whip in vinegar and dissolved seasonings.
Toss together with lettuce and serve immediately.
NOTE - A wooden spoon works well to blend blue cheese and mayonnaise.
