Toffee Pineapple

INGREDIENTS 1 egg
1 cup flour
1/2 cup cornstarch
2 cups water
16 pineapple chunks
8 to 10 cups oil
1/2 cup sugar
1 tablespoon sesame seedsCombine egg, flour, cornstarch and water to make a batter. Mix the pineapple well with the batter.
Heat the oil in the wok to at least 350 degrees, (preferably 400 degrees) and fry the pineapple 4 to 5 minutes or until light brown.
Pour off the oil and drain the pineapple. While the wok is still hot, melt the sugar in it until it "spins" or turns golden brown. Immediately add sesame seeds and the pineapple. Toss to cover the fruit with sugar and seeds.
Serve immediately after tossing by dipping each pineapple chunk into a bowl of cold water which will make each piece crispy on the outside and cool enough to eat.
NOTE - For this recipe you can use practically any fruit that is large enough, such as apples, strawberries or bananas - but pineapple works the best.
