INGREDIENTS 1/2 cup cracked wheat
4 tomatoes
2 bunches parsley, finely chopped
4 scallions, finely chopped
1/4 teaspoon dried mint
2 tablespoons olive oil
Juice of 1 lemon
Salt
4 lettuce leavesSoak the wheat in water by placing wheat in a bowl and adding just enough water to cover. Let soak for 15 minutes. Drain.
Slice 2 of the tomatoes and set aside. Chop the remaining 2 tomatoes. Add to the wheat with the parsley, scallions, mint, olive oil and lemon juice. Season to taste.
Chill the mixture for 15 to 20 minutes and serve on lettuce leaves with sliced tomatoes as garnish.
NOTE - There are a number of different degrees of coarseness of cracked wheat. For Tabouleh the #2 cracked wheat is the best.
