Szechaun Spiced Shredded Beef

INGREDIENTS 1 pound flank steak, shredded
2 egg whites, lightly beaten
1 tablespoon cornstarch
3 to 4 cups oil
3 tablespoons hot pepper oil
1/2 tablespoon chopped fresh ginger
1/2 tablespoon chopped garlic
1/2 tablespoon chopped green onion
1 tablespoon soy bean paste
8 black mushroooms, soaked in cold water and shredded
4 ounces bamboo shoots, shredded
2 tablespoons soy sauce
1 tablespoon salt
1 tablespoon sugar
1 tablespoon sherry
Dash of vinegarMix the shredded beef with the egg whites and the cornstarch. Stir-fry the beef in hot oil until it changes color. Enough oil should be in the wok to cover the beef.
Remove the beef and pour off the oil. Heat the hot pepper oil in the wok and add the ginger, garlic, green onion, soybean paste, mushrooms and bamboo shoots. Mix in the remaining ingredients and the beef. Cook over high heat and serve.
NOTE - It will be much easier to shred the beef if you partially freeze it before shredding.
