Strawberries In Cream

INGREDIENTS 3 cups whole fresh strawberries, hulled, washed and drained
4 whole strawberries, washed, stems on
4 fresh mint sprigs, washedAfter preparing the hulled strawberries, divide equally into serving dishes. (Small wide-mouth wine glasses are preferred.)
Neatly spoon the cream over the mound of strawberries.
Garnish each glass by placing 1 whole berry, with stem on, and a mint sprig on top of the mound.
CREAM
1/2 cup heavy cream
1-1/2 ounces marshmallow fluff
2-1/2 teaspoons dark brown sugar, packed
1/8 teaspoon vanilla extract
1/2 ounce Grand MarnierPlace the heavy cream in a small chilled mixing bowl.
Add the marshmallow fluff, brown sugar and vanilla extract. Using a whisk, whip the mixture briskly until slightly thickened. (An electric mixer can be used.)
After the cream has begun to thicken, add the Grand Marnier and beat rapidly until the mixture thickens, but do not whip until stiff.
NOTE - What makes this dessert so light and refreshing is that the cream is not stiff. The cream should be the consistency of honey.
