Spring Broccoli Soup

INGREDIENTS

1 medium head of broccoli
4 tablespoons butter
3/4 cup chopped onion
2 tablespoons flour
2 cups chicken broth
1-1/2 teaspoons Worcestershire sauce
1-1/2 teaspoons Tabasco sauce
3/4 teaspoon salt
2 cups milk
1 cup grated sharp Cheddar cheese
1/4 cup chopped fresh parsley

Cut broccoli into tiny florets. Cook in salted water until tender. Drain.

Melt butter; add onions and sauté until tender.

Blend in flour and gradually add chicken broth, stirring all the while. Heat slowly until the mixture boils. Add Worcestershire sauce, Tabasco sauce, salt, broccoli and milk. Sprinkle in grated cheese. Stir until melted.

Serve garnished with fresh parsley.

NOTE - Fresh broccoli is essential for this recipe.....frozen just does not have enough flavor.
