Romaine Salad with Mint Vinaigrette Dressing

INGREDIENTS

1 head romaine, trimmed, washed, dried and torn into bite-sized pieces
2 medium tomatoes, sliced
1 large green pepper, sliced
4 scallions, chopped
Mint Vinaigrette Dressing

Gently mix the vegetables and chill. Add the dressing and serve on chilled plates.

MINT VINAIGRETTE DRESSING

1/2 cup olive oil
Juice of 1 lemon
1 teaspoon dried mint
Salt

Mix all ingredients well. Let the dressing sit for a couple of hours before using.
