Roasted Zucchini Slices

INGREDIENTS 1-3/4 pounds zucchini, cut into 1/4-inch slices
1 teaspoon dried thyme leaves
Salt and pepper, to taste
2 tablespoons melted butter
Freshly grated Parmesan cheesePreheat oven to 450 degrees. Place zucchini slices in a large, shallow pan in single layer or slightly overlapping as needed. Sprinkle with the thyme, salt and pepper. Drizzle with the butter. Roast until tender and lightly browned, about 40 minutes. Sprinkle with the cheese and return to oven for another few minutes. Serve hot or warm.
NOTE - You can substitute olive oil for the butter if you prefer.
