Golden Pumpkin Muffins

INGREDIENTS

2 cups flour
1 cup sugar
1 tablespoon plus 1 teaspoon baking powder
1/2 teaspoon salt
1/4 pound butter
1 cup canned pumpkin
1 cup evaporated milk
2 eggs, beaten
1/2 teaspoon cinnamon
1/8 teaspoon cloves

Preheat oven to 375 degrees.

Mix together the flour, sugar, baking powder and salt. Cut in butter until mixture has a crumbly texture.

In a separate bowl, combine pumpkin, milk, eggs and spices; mix well. Gradually add dry mixture, beating until smooth.

Fill greased muffin tins (or paper-lined tins) two-thirds full. Bake in preheated oven for 20 minutes.

NOTE - A helpful hint for this or any muffin recipe is to use a small ice cream scoop to measure the batter when filling the muffin tins. It will give you consistent-sized muffins.
