Deep-Fried Artichoke Hearts

INGREDIENTS

4 cups bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon pepper
20 artichoke hearts, canned or frozen
Lemon Butter

Heat deep-fat fryer to 350 degrees.

Mix bread crumbs, Parmesan cheese, salt and pepper. Cover artichokes with mixture and fry until golden in preheated deep-fat fryer.

Serve with Lemon Butter

LEMON BUTTER

1/2 pound butter, softened
3 tablespoons lemon juice
1 teaspoon fresh parsley

Combine ingredients and blend well.

NOTE - It is very important to have the oil hot enough to quick fry the artichokes. Put just a few artichokes in at a time to keep the temperature of the oil from dropping.
