Chocolate Mousse

INGREDIENTS 5 ounces unsweetened chocolate
4 tablespoons butter
1/2 cup sugar
4 tablespoons honey
1 tablespoon instant coffee
1/4 cup cream
2 egg yolks
2 tablespoons rum
2 cups whipping cream
4 egg whitesPlace first 6 ingredients in a double boiler until chocolate is melted. Hold aside from the heat until the chocolate mixture is at room temperature.
Add yolks and rum to the chocolate mixture, mixing well.
Whip the cream; whip the egg whites until stiff. Gently fold whipped cream and egg whites into chocolate mixture. Pour into individual dessert glasses and chill 6 to 8 hours.
NOTE - This is a good dessert not only because people like chocolate but because it can be made a day ahead. The honey gives it a slightly different taste from the typical chocolate mousse.
