Boston Bibb Lettuce with Soy-Sesame Vinaigrette

INGREDIENTS 1/4 cup olive oil
2-1/2 tablespoons tarragon vinegar
2-1/2 teaspoons Japanese soy sauce
Scant 1/8 teaspoon oriental sesame oil
1/8 teaspoon coarse kosher salt
Freshly ground black pepper
1/8 teaspoon dry mustard
1/4 teaspoon fresh or dried tarragon leaves, chopped and tightly packed
2 to 3 heads Boston Bibb lettuce, cleaned, dried and torn into bite-size piecesCombine all the ingredients for the dressing and mix well. Toss with the lettuce to coat each leaf just before serving.
NOTE - It is better to tear than cut the lettuce. It bruises less and stays crisp.
