Bibb Lettuce and Spinach Salad

INGREDIENTS

6 ounces fresh spinach, washed and stems removed
2 heads Bibb or Kentucky limestone lettuce, broken in pieces
4 slices fresh bacon, cooked and crumbled
2 hard-cooked eggs, chopped
3 ounces fresh bean sprouts
12 cherry tomatoes
Creamy Anchovy Dressing

Combine spinach and lettuce and portion onto chilled glass plates. Garnish attractively with remaining ingredients. Serve with Creamy Anchovy Dressing.

CREAMY ANCHOVY DRESSING (MAKES 4 CUPS)

1 1/2 cups salad oil
1/2 cup cider vinegar
1 teaspoon garlic powder
1/2 teaspoon dry English mustard
Salt and white pepper to taste
Oregano to taste
Garlic powder to taste
Chopped parsley to taste
2 eggs
2 teaspoons anchovy paste

In a bowl, combine all ingredients except eggs and anchovy paste. Beat the eggs and anchovy paste together and then beat into the mixture until smooth.

NOTE - This dressing has a bitey taste. It could be used on a variety of greens.
