Al-Roubaie Soup

INGREDIENTS

1 onion, chopped
3 cloves garlic, minced
1 1/2 tablespoons butter
3 cups chicken broth, fresh or canned
1 bay leaf
1 cup cream
1/4 teaspoon white pepper
1 teaspoon horseradish
1 egg white
Dash of anise
4 teaspoons chopped olives

Sauté the onion and garlic in butter until the onion is transparent.

Add onions and garlic to the broth along with all of the remaining ingredients except the olives. Simmer 30 minutes. Remove the bay leaf and strain the broth.

Serve hot with a teaspoon of chopped olives on top of each serving.
