Lemon Bars

INGREDIENTS

1 cup flour
1/2 cup margarine
1/4 cup powdered sugar

Prepare like a pie crust and pat into a 8 x 8-inch pan. Bake at 350 degrees for 20 minutes.

2 eggs, beaten
1 cup sugar
3 tablespoons lemon juice
Dash of salt
2 tablespoons flour
1/2 teaspoon baking powder

Beat eggs. Add sugar, salt, and lemon juice. Mix well. Combine flour and baking powder. Mix well with egg mixture just before removing crust from oven.

Pour mixture over crust and bake 25 minutes at 350 degrees. Sprinkle with powdered sugar just before serving.
