INGREDIENTS

3/4 teaspoon cornstarch
1/8 teaspoon salt
3 tablespoons honey
4 teaspoons lemon juice
1 slightly beaten egg yolk
One 8-ounce carton plain yogurt
1/2 cup whipping cream
4 cups desired fresh fruit*
1 cup granola

In a small saucepan combine cornstarch and salt. Stir in honey and lemon juice. Cook and stir until thickened and bubbly, then cook and stir 2 minutes more. Gradually stir about half of the hot mixture into the beaten egg yolk. Return egg mixture to saucepan. Cook and stir over low heat for 2 minutes more. Remove from heat and stir in yogurt. Cool completely.

In a small mixer bowl beat whipping cream until soft peaks form. Fold whipped cream into yogurt mixture. Chill thoroughly.

Just before serving, layer yogurt mixture, desired fruit, and granola into 8 individual dessert dishes.

Makes 8 servings

*NOTE - Choose any combination of the following: peeled and sliced peaches, bananas or pineapples, or berries, halve large strawberries.
