INGREDIENTS

1/3 cup raisins
2 tablespoons dark rum
1 package (1.3 ounces) sugar-free cook-and-serve chocolate pudding
1 quart skim milk
1 package (0.8 ounce) sugar-free cook-and-serve vanilla pudding
1 medium banana

In custard cup, soak raisins in rum 15 minutes. Prepare chocolate pudding as package label directs, using 2 cups skim milk. Stir in raisins and rum; cover and refrigerate 2 hours, or until thoroughly chilled.

Prepare vanilla pudding as package label directs, using remaining 2 cups milk. Cut banana crosswise in thin slices; stir into vanilla pudding. Cover; refrigerate 2 hours, until chilled.

Assemble parfaits: Stir each pudding mixture; spoon 1/4 cup chocolate mixture into each of 8 parfait glasses. Spoon 1/4 cup vanilla mixture over chocolate mixture in each glass. Repeat layering with remaining mixtures.
