Black Raspberry Mousse

INGREDIENTS 12 ladyfingers
2 packages Black Raspberry Gelatin
3 cups water
3 teaspoons lemon juice
1 quart vanilla ice cream
1 cup whipping cream
1/2 cup strawberriesLine a 10-inch pie plate with ladyfingers, split and cut in half, round end up. Line bottom of plate with extra ladyfingers.
Pour 1 cup boiling water over raspberry gelatin. Stir until dissolved. Add 2 cups cold water, lemon juice and vanilla ice cream. Stir until dissolved. Pour into lined plate and set in refrigerator.
To serve, cover with whipped cream and strawberries.
