Blackberry and Lemon Fool

INGREDIENTS

1 pound 2-ounces mascarpone cheese
7-ounces blackberries
1-1/2 lemons, juice and zest
4 fluid ounces double cream
6 tablespoons confectioners' sugar

Blackberries
Sprigs of fresh mint
Confectioners' sugar
Cookies

Place the mascarpone, blackberries, lemon juice and zest, double cream and confectioners' sugar in a blender and purée until smooth.

Spoon into serving dishes and chill a few hours before serving. Decorate with a few berries on top and a sprig of mint and a dusting of confectioners' sugar and serve with cookies.

Makes 4 servings

NOTE - Strawberries or Raspberries can be used in place of the blackberries.
