Baked Apples

Since the texture, size, and ripeness of apples vary so greatly, cooking times for apples vary also. Be sure to check Baked Apples at the lower end of the range in cooking time to prevent overcooking.
INGREDIENTS
4 large baking apples, peeled and cored
1/4 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon plus 1 teaspoon butter or margarine
1/2 cup apple juice
Red food coloring, optionalPlace apples in an 8-inch square baking dish.
Combine brown sugar, cinnamon, and nutmeg; spoon about 1 tablespoon sugar mixture into cavity of each apple. Top each with 1 teaspoon butter.
Bring apple juice to a boil; add food coloring, if desired. Pour juice into baking dish. Cover and bake at 400 degrees for 25 to 35 minutes, basting occasionally with juice.
