INGREDIENTS
3 cups soft bread crumbs
1/4 cup butter, melted
3 tablespoons sugar
1/2 cup whipping cream
1 tablespoon sugar
1/4 teaspoon vanilla
One (15-ounce) jar chunk-style applesauce
1/3 cup chopped almonds, toasted, if desired
2 tablespoons raspberry jamIn a medium mixing bowl toss together bread crumbs, butter, and the 3 tablespoons sugar. Spread into a 13 x 9 x 2-inch baking pan. Bake in a 375 degree oven for 15 to 20 minutes or until lightly toasted, stirring once or twice.
Meanwhile, in a small mixer bowl beat whipping cream with the 1 tablespoon sugar and vanilla just until soft peaks form.
In a 1-quart serving bowl, layer 1/3 of the crumb mixture, half of the applesauce, half of the almonds, and half of the whipped cream. Repeat layers, ending with crumbs. Cover and chill thoroughly.
To serve, melt jam and drizzle atop.
