Tuna Fish or Salmon Crepes

INGREDIENTS

1-1/2 cups tuna or salmon
1 tablespoon capers
1 tablespoon finely chopped gherkins
1 hard-boiled egg, chopped
1 tablespoon parsley, finely chopped
1 tablespoon enriched Bechamel sauce or 1 tablespoon mayonnaise

Combine the above ingredients and put 2 tablespoons in each crepe. Roll the crepes and place in a buttered ovenproof dish.

Place in a preheated 400 degree oven for 15 minutes. Cover with an enriched Bechamel Sauce or Russian Dressing.

Makes 8 crepes
