Tomato Sauce

INGREDIENTS 3 medium-sized ripe sliced tomatoes
1/2 small onion
1 bay leaf
1/2 cup chicken stock or chicken brothSimmer the above ingredients for 20 minutes. Put into the blender for 10 seconds and pass through a sieve to remove the tiny pieces of tomato skins.
1 tablespoon butter
1 tablespoon flour
1 cup flavored tomato juices from above
1 teaspoon sugar
1/4 teaspoon rosemary or 1/4 teaspoon basil, or 1/4 teaspoon oregano
(1/2 teaspoon tomato paste), optionalMelt the butter and add the flour. Add the strained tomato juices gradually, stirring the sauce with a wire whisk until thickened. Add the herbs and simmer the sauce for 5 minutes. Correct the seasonings with salt and pepper.
NOTE - It may be necessary to add the optional tomato paste in the winter months when the tomatoes have less flavor. This is an excellent sauce for spaghetti as well as other foods.
