Spiced Apricot Sauce

INGREDIENTS

1 (10-ounce) jar apricot preserves
Rind and juice of 1 lemon
Pinch of cinnamon
Pinch of cloves
1 teaspoon arrowroot or 1 teaspoon cornstarch dissolved in 1 tablespoon cold water

Melt the apricot preserves in a small heavy saucepan adding the juice and rind of a lemon and the spices. Strain the contents of the pan and return the clean liquid into a clean saucepan. Dissolve the arrowroot or cornstarch in the water and add to the sauce. As the sauce comes to the boiling point it will thicken.

This sauce can be used hot or cold.

NOTE - Arrowroot is used in preference to cornstarch to make a clearer more shiny sauce. However, if you are not able to find any arrowroot, cornstarch is a good substitute.
