Praline Crepes

INGREDIENTS 1/2 cup sugar
1/2 cup almonds with their skins onIn a heavy saucepan, combine the almonds and sugar. Allow the sugar to melt over a gentle heat. (The sugar will gradually caramelize, becoming a deep brown and roasting the almonds.) When this point has been reached, tip the contents of the pan onto an oiled marble slab or inverted cake pan. Allow the caramel to harden and crush into a coarse powder using a rolling pin or crack into large pieces and grind it in a blender. This Praline Powder may be sprinkled on cakes, used for tart decoration or folded into ice cream. As a crepe filling, it is combined with the remaining ingredients.
3 tablespoons butter
1/4 cup sugar
Soften the butter with a wooden spoon in a small bowl. Add the sugar and beat until light in color. Add the prepared praline powder and, if you like, 1 tablespoon dark rum.
Spread into crepes. Fold each crepe and serve with flaming peaches.
These are very good!
