Crepes filled with peaches and honey

INGREDIENTS

Your favorite crepe recipe

1 pound peaches, about 4 medium
3-1/2 tablespoons unsalted butter
2 tablespoons honey
2 teaspoons sugar

Prepare 8 crepes or have had prepared them ahead of time. Butter a baking dish or gratin pan. Preheat oven to 425 degrees.

Prepare a large bowl with cold water. Bring a large pot of water to a boil and plunge in the peaches for 30 seconds. Remove the peaches and place them into the cold water. Peel with a paring knife.

Cut the peaches into thin slices. Reserve 8 slices for garnish.

Melt 2 tablespoons of the butter in a large skillet and add the peaches. Stir gently to coat with butter. Add the honey and cook for 3 minutes. Remove from heat.

Put 5 or 6 peaches near the edge of each crepe and drizzle with a little of the honey/butter. Roll them up.

Place them in a single layer in the prepared pan and dot with the remaining butter. Sprinkle with the 2 teaspoons of sugar. Bake about 5 minutes to heat through.

TO SERVE - Allow 2 crepes per person. Serve on warmed plates. Add a dollop of creme fraiche or a spoonful of peach ice cream and garnish with the reserved peach slices.
