Peach Sauce

INGREDIENTS 6 ripe fresh peaches or 1/2 pound dried peaches, soaked overnight in water
2 cups water
1 cup sugar
2 strips lemon rind
Juice of 1/2 lemonMake a syrup by combining the sugar and water. Add the lemon juice and lemon rind.
Simmer the peaches in the syrup for 10 minutes. Remove the peaches and press through a sieve or purée in a blender, adding a little of the syrup in which the peaches were poached to correct the consistency of the sauce.
