Mornay Sauce

INGREDIENTS

1 tablespoon butter
1 tablespoon flour
1 cup milk
3 tablespoons Swiss or Gruyere cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon prepared mustard, preferably Dijon type

Melt the butter in a small saucepan. Remove from the heat and add the flour, stirring with a wire whip.

Return to a moderate heat. Add the milk gradually, stirring the mixture constantly until the sauce is thickened. Add the remaining ingredients, and salt and pepper to taste.
