Blender Melba Sauce

INGREDIENTS

1 package frozen raspberries
3 tablespoons sugar
Juice of 1/2 lemon
1 tablespoon Framboise, Cognac or Kirsch, optional

Defrost the raspberries and place in the blender with the remaining ingredients. Turn on the motor for 10 seconds and pass the liquid through a fine sieve to remove any tiny seeds.

This and all fruit sauces may be thickened, if desired, with 1 to 2 teaspoons arrowroot or cornstarch dissolved in 1 tablespoon cold water. Bring the sauce to the boil and add the thickening. It will thicken immediately, leaving no taste.
