Crepes with Lemon Butter

INGREDIENTS Your favorite crepe recipe
1 stick unsalted butter, softened
1/2 cup confectioners' sugar plus extra for dusting, if desired
1/4 teaspoon salt
1 tablespoon lemon juice
1 tablespoon lemon zestPrepare 10 crepes. If they have been prepared ahead of time, wrap them in foil and reheat for about 10 minutes in a 325 degree oven.
With an electric mixer at medium speed, beat the butter until light and fluffy. Add the sugar and beat until smooth.
Add the lemon juice and zest and beat briefly to combine.
If not using immediately, wrap it in plastic wrap in the form of a 6-inch log and store up to 2 days in the refrigerator.
TO SERVE - Place about 1 tablespoon of the lemon butter on the crepe and roll into a cigar shape. Sprinkle with confectiners' sugar, if desired, and serve.
