Lemon Sauce

INGREDIENTS

1 cup water
1 tablespoon butter
1/2 cup sugar
2 whole eggs
1 tablespoon cornstarch
Juice of 1 lemon
1 teaspoon vanilla

Melt the butter in the water with half of the sugar. In a separate bowl, combine the eggs and the remaining sugar with the juice of the lemon. Add 1 tablespoon cornstarch.

Pour the boiling water, sugar, and melted butter into the eggs, sugar, lemon juice and cornstarch and stir over a gentle heat until thickened. Add 1 teaspoon vanilla.
